Wagyu Ribeye The Steak

  1. 8 oz Wagyu rib steak per person
  2. Pinch salt and pepper

The Garlic Mash

  1. 5 Yukon gold potatoes
  2. 2 Tbsp Minced garlic
  3. 3 Tbsp Butter
  4. 2 C Heavy cream
  5. 1 C Shredded Asiago
  6. To taste Kosher salt
  • In a heavy saucepan, add cream, butter, and garlic
  • Reduce to heavy paste
  • Boil potatoes until fork tender
  • Drain, and mash with cream reduction
  • Add cheese and mix
  • Salt to taste
  • Pan sear in 400˚ oven

The Demi

  1. 2 C Red wine
  2. 2 tsp Garlic
  3. 3 C Heavy Veal Stock
  • Salt to taste
  • Place red wine, garlic, and veal stock into heavy saucepan
  • Reduce at slow simmer until only ½ C remains. Strain. Salt to taste
