Millet Gluten-Free Bakery is Bellingham’s only 100% gluten-free bakery. Open for less than a year, it’s risen in popularity faster than the owners could ever have imagined.

The owners, three sisters named Chloe Vogel, Aemilia Vogel, and Clara Dwyer, have been baking their entire lives. The sisters saw a need within the community for a gluten-free bakery, being mostly gluten-free themselves, and are grateful for the opportunity to supply genuinely delicious gluten-free baked goods.

“As a fellow celiac, I know what it’s like to not be able to eat something and be able to finally come and be like, ‘Oh my gosh, I get to have a donut.’ I mean, it was years before I got to eat a donut that wasn’t just packaged and gross and sad…it’s such a special thing,” says Clara.

According to Chloe, the name Millet comes from one of the grains that they use in their products. The sisters sell everything from baguettes and loaves to cinnamon rolls and pizza dough. One of Chloe’s favorite things about running the bakery and creating these products is getting to be innovative.

“Personally, [finding] new creations is the most fun, like finding flavor combos for things and just having a creative input,” she says.

Millet Gluten-Free Bakery is both online and in-person on the weekends. You can also find Millet Bakery in both Community Food Co-op locations in Bellingham and Otherside Bagels. Some places they have sold to before include Aslan Depot and ROAM Coffee + Beer, amongst others. These have been big milestones for the business, as it continues to grow.
