A new Mexican restaurant has arrived on the scene in Fairhaven, taking over the space previously occupied by Jalapeños.

Tacos Guadalajara opened its doors in November 2025 and is owned by Guillermo Rosas, who operates a quick-service taco joint by the same name in Ferndale. Patrons can expect the same authentic flavors at the Fairhaven location, with an expanded menu for the more traditional restaurant setting.

Tacos Guadalajara is a family affair. Guillermo’s son, also named Guillermo Rosas, waits tables and is excited about reaching a new audience in Fairhaven. They’re refining the menu as they get to know their new customers, but their goal is always to serve good portions at an affordable price.

“We were originally a taco place, so we do have a lot of focus on the taco aspect,” says the younger Guillermo. “If you’re in here for lunch, I really like the burrito California, or some tacos. If you’re in here for dinner, a good carne asada always hits the spot.”

The two-story restaurant features ample seating and a fully stocked bar upstairs. With a relaxed atmosphere, Tacos Guadalajara is a great spot to grab drinks and a delicious meal with friends. In the warmer spring and summer months, head outside to the patio and even bring your furry friend along—outdoor seating is pet-friendly.

For those seeking an adventurous culinary experience, the elder Guillermo also recommends exploring the full menu offerings.
