Husband and wife duo Solomon and Zion Klar shared a dream of bringing an elevated coffee experience to the Pacific Northwest. In April 2025, after months of research and hands-on work, the Klars opened their retro RV turned coffee trailer: HI Tide Coffee. The Klars decided to share HI Tide’s journey on TikTok and Instagram to connect with the community and grow an intentional brand. This authenticity struck a chord. Hammerhead Coffee Roasters
Scott Hartwich and Mary Burwell first opened Hammerhead Coffee Roasters in 2007, gaining local exposure through the coffee cart they manned at the Bellingham Farmer’s Market. Nearly two decades later, owners Mitchell Steed and Meredith O’Malley continue to carry the legacy created by Mary and Scott, roasting quality blends with a focus on maintaining consistency and variety. Hammerhead’s website boasts a mix of medium, dark, and decaf roasts, with the option to join a subscription if you never want to risk waking up to an empty coffee pot. Locals can also pay a visit to Hammerhead’s flagship location in downtown Bellingham, which opened in June 2023.
