These days, I’ve found that hope and community are more important than ever, especially considering the current state of our world. Luckily, we’ve got access to a healthy resource in Skagit County that is more reliable and comprehensible than ever. This is Cosmic Veggies, a vegan and gluten-free eatery in downtown Anacortes founded by charismatic, passionate boss-woman Elizabeth Weaver.
Around 13 years ago, Weaver was recovering from alcohol and drug use, and wanted to improve her health. Curiosity led her to begin juicing organic produce at home, and she realized that eating organic foods with intention boosted her energy and wellbeing. Her community noticed, and became interested in learning about her lifestyle changes. In May 2015, Weaver decided to open a stand at the Anacortes Farmers Market called Drink Your Veggies. Thus, Cosmic Veggies was born.

“We’ve grown a lot since then…we were just doing organic juice and smoothies,” says Weaver. After a few years, they moved into a storefront, where Weaver worked nonstop. “I was the only employee using that day’s sales to go buy more [produce] to be open the next day. But I really believed in what we were doing…now we’ve been through 10 years.”
Cosmic Veggies’ mission for the last decade has been to open doors for people who want to “experience incredible health, healing, and abundant energy” through delicious organic meals. The menu features immunity support smoothies, seasonal specials, salads, wraps, and much more.
“My favorite food item right now is the Italian wrap. It’s basically the most delicious pizza slice you’ve ever had, but fold it in half like a wrap. We don’t use just any vegan, gluten-free ingredients. They have to be super high quality, organic, hand-picked, locally sourced,” says Weaver.
Now, Cosmic Veggies is composed of a small team of employees, including Weaver’s daughters, her husband, and her raw chef, Kim Blair. Blair has been with Cosmic Veggies for about five years and is an important contributor to the company.

“Kim is the one who knows the nutrition and science behind it, because she has all the college degrees and everything, so she’s a huge reason why this grew from such a small menu into a huge menu,” says Weaver. “She’s my genius…We’re a great team together.”
Cosmic Veggies is incredibly community-based and provides seasonal arts and crafts for all ages. One of Weaver’s favorite parts of owning and working at Cosmic Veggies is witnessing the positive impacts they make on their customers.
“My husband and I were on the beach with our dogs not too long ago, a lady I recognized from the store walked by, introduced herself, and started crying. She was saying, ‘You changed my health’…We’re changing people’s health, showing them new ideas and ways to incorporate it into their lives so they can do it for a lifetime,” says Weaver.

Weaver is constantly thinking up new ways to better Cosmic Veggies. In late October 2025, they partnered with Anacortes Health and Nutrition to create the ultimate health and wellness package. This package contains Cosmic Veggies’ 5-day detox package and various herbs, supplements, and teas.
