There’s a new destination for barbecue lovers in Lynden, and the experience goes well beyond the smoker. Rustic Bar & Grill opened for business on May 13 at the Cobblestone Hotel & Suites, adding an elegance to Whatcom County’s dining scene.
The restaurant serves up fresh and refined dishes with an established feel that’s equally suited for a casual lunch or an evening out. Inside, cowhide accents, stone-lined walls, and the glow of incandescent lights bring the rustic flair to the dining room. Outside, take in the fresh air and dine al fresco on their outdoor patio with a picturesque glimpse of Mt. Baker as the backdrop.
With a thoughtfully curated menu, Rustic Bar & Grill serves a mix of surf and turf alongside diverse appetizers, unique craft cocktails, and signature desserts. The Heirloom Bruschetta delivers a bright start with fresh ricotta cheese and is finished with a balsamic glaze and basil, while the Barbecue Beef Brisket Sandwich showcases tender, smoky meat with red onion, spicy pickle, and garlic aioli all on a French roll. The Seafood Scampi shows another side of the kitchen with jumbo prawns, crab meat, and smoked wild Alaskan Sockeye served with pappardelle pasta tossed in a garlic white wine reduction.
Rustic Bar & Grill captures the spirit of its name by bringing together rugged details, refined flavors, and a kind atmosphere. As it settles into its new home in Lynden, it adds another hub for community in our region’s growing dining landscape.
